Scarlett has such a great vibe—it’s modern, but still super cozy. You’ll see those concrete ceilings and wooden floors, with warm lighting everywhere. There’s a long bar, big tables to sit at together, and comfy corners where you can just relax. Whether you’re coming for dinner with two or with a whole group, it always feels right.

During our visit to Scarlett, we chatted with a friendly Thai couple next to us. When we shared our love for Thailand and said we started Thailand Magazine because of it, the man surprised us by saying he was the architect of the building we were in. What a small world!

Scarlett is led by Chef Sylvain Royer, an award-winning French chef with experience in Michelin-starred restaurants and top 5-star hotels like Sheraton Brussels Airport, Le Meridien Damascus, and Pullman Bangkok King Power. He manages Scarlett Bangkok and other restaurants in Asia, New Zealand, and the USA. Scarlett reflects his vision of mixing authentic French cuisine with a lively, welcoming atmosphere. He focuses on local ingredients alongside premium French products like cheeses, cold cuts, and oysters. In 2019, Chef Royer earned the Maître Cuisinier de France title, honoring chefs who preserve French culinary traditions.

What did we order at Scarlett?

We started our evening at Scarlett with sparkling drinks to celebrate a special visit from a friend from the Netherlands. Scarlett was the perfect place, especially when a surprise fireworks show lit up the sky nearby. After tasting great wines, we ended the night with a round of skillfully made cocktails.

Here’s a taste of what we ordered:

• Scarlett Night: Bombay gin, Antica Formula Vermouth, Aperol, rosemary syrup, and lemon—a sophisticated, herbaceous blend.
• The Red Nails: Gin, rose syrup, wild honey, lime juice, and rose foam—rosey, fresh, and beautifully balanced.
• Te Fiti: Bacardi Carta Negra, pineapple juice, passionfruit, and a house-made spice cordial—tropical and slightly spicy.
• Coffee Breath: Tito’s vodka, Frangelico, and coffee syrup—a rich, smooth cocktail perfect for coffee lovers.
• Pop My Cherry: Tito’s vodka, Cinzano Rosso, Maraschino, cherry juice, lime juice, and orgeat syrup combine for a fruity, lively cocktail— a fun way to end the night.

For our festive night at Scarlett, we started with fresh oysters and a fantastic charcuterie and cheese board from their great selection. As Dutch cheese lovers, this was a perfect choice! For the main, we shared a 4–6 week dry-aged Côte de Bœuf, grilled medium-rare and served in a smoke-filled box—looking amazing and tasting even better. To finish, we shared the Grand Marnier Soufflé, made in classic French style with plenty of Grand Marnier orange liqueur—what a memorable ending!
