Chef Arnaud Dunand
Chef Arnaud Dunand Sauthier is a culinary star in Thailand. He discovered his love for cooking at 12 in the mountains of Savoie. His journey led him to top kitchens in France, training under Marc Veyrat, Jacques Lameloise, and Jean-François Piège at Hôtel de Crillon.
In 2012, he took charge of Le Normandie at the Mandarin Oriental, Bangkok, and within five years earned and kept two Michelin stars. With over 25 years of experience, Arnaud is now creating a more personal journey at Maison Dunand—mixing his alpine roots with Asia’s rich culture.

Wine
The wine list is a standout, carefully chosen with wines from Savoie, Alsace, Burgundy, and more. The sommeliers are known for their friendly service and perfect pairings. You can enjoy wine pairings with each tasting menu, plus a great selection of sparkling wines, Champagnes, and cocktails for aperitif time.
Our dining experience at Maison Dunand in December 2024
Our dinner at Maison Dunand started with a carefully crafted introduction to Chef Arnaud’s alpine-meets-global style. The amuse-bouches arrived like small works of art—delicate, surprising, and full of flavor. The organic egg with tuna and garum came in an eggshell on straw, setting the mood. We enjoyed champagne while admiring a wooden chest filled with truffles and edible flowers—a feast for the eyes before the meal began. The Brittany mackerel with horseradish and buttermilk was light and creamy, followed by the Norway Langoustine XXL with Jerusalem artichoke and hazelnut—cooked perfectly and a highlight of the night. Every detail was thoughtful and precise.
Next, we tasted deeper, bolder flavors. The Vol au Vent ‘Maison Dunand’ with black winter truffle and olives came with a rich, nostalgic aroma and was topped with plenty of truffle—a dish that truly warms the soul. For the main course, we had Roe Deer with cassis and salsify—a perfectly balanced plate, with the gamey meat contrasting nicely with the sweet sauce. Each course was well timed, and the sommelier’s wine choices matched the dishes perfectly, adding depth to the experience.



To finish, the cheese trolley arrived—a dream for any cheese lover. From sharp aged to soft creamy cheeses, each came with handmade condiments and dried fruits. The Alpine Cheeses ‘Antony’ were served in generous slices, with staff sharing their knowledge. For dessert, we enjoyed refreshing Quince with honey, pollen, and yogurt—delicate, fragrant, and beautiful. Maison Dunand didn’t stop there: petits fours, including perfect canelés and playful bites on cocoa nibs, ended our evening elegantly. Every bite was memorable, every detail intentional. It was an unforgettable night that stayed with us long after the last glass was empty.



What is excellent food without great wines?
The wine pairing at Maison Dunand was exceptional—a true part of the chef’s story. We started with a crisp Crémant de Savoie by Jean-François Quénard, honoring Chef Arnaud’s alpine roots with elegant bubbles and minerality. Each course was paired with care: a fresh Jacquère from Chignin, the creamy Perles Ivoire 2020, and memorable reds like Pinot Noir Herrenreben 2019 from Alsace and La Rectorie Collioure, which matched the gamey roe deer perfectly. The sommelier team, led by Khun Bird, was warm and knowledgeable, sharing each wine with passion. Every glass enhanced the meal.
